Instructions

  1. Begin by creaming the softened unsalted butter in a large mixing bowl using an electric mixer on medium speed. Continue mixing until the butter is light and fluffy, about 2-3 minutes. Gradually add in the granulated sugar and light brown sugar, beating until well combined and smooth.
  2. Crack an egg yolk into the butter-sugar mixture and pour in the vanilla extract. Mix everything together on low speed until fully incorporated, about 30 seconds.
  3. In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Slowly add the flour mixture to the wet ingredients, mixing on low speed until just combined.
  4. Scoop about one tablespoon of dough and roll it into a ball. If desired, roll the ball in granulated sugar for a sparkling touch. Place on a wax-paper covered plate or small cookie sheet and chill in the freezer for about 30 minutes.
  5. Preheat your oven to 375°F (190°C). Microwave the jam or preserves for about 5-10 seconds to soften it.
  6. Remove the dough from the freezer and press an indentation into the center of each cookie dough ball using your thumb.
