  • 250 g pasta Penne or farfalle recommended, but any type works.
For the Sauce
  • 1 tablespoon olive oil For sautéing garlic.
  • 1 medium orange Zest and juice needed.
  • 3 cloves garlic Minced.
  • 100 ml heavy cream Provides creamy texture.
  • 150 g cheddar cheese Grated.
  • 50 g Parmesan cheese Grated.
  • salt To taste.
  • pepper To taste.
For Garnishing
  • fresh basil leaves Optional.
  • grated orange zest For garnish.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Cook 250 g pasta until al dente, about 8-10 minutes. Drain and reserve ¼ cup water.
  2. In a skillet, heat 1 tablespoon olive oil over medium heat. Add 3 minced garlic cloves and sauté for 1 minute until fragrant.
  3. Pour in the zest and juice of 1 orange, stirring well. Simmer for 2 minutes.
  4. Slowly add 100 ml heavy cream while stirring. Let simmer for 2-3 minutes until thickened.
  5. Gradually stir in 150 g cheddar and 50 g Parmesan cheese until melted and smooth.
  6. Season the sauce with salt and pepper to taste.
  7. Add the cooked pasta to the sauce, tossing until well coated. Add reserved pasta water if needed.
  8. Serve in bowls, garnished with fresh basil and orange zest.
