Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Lay the low-carb tortillas flat on your work surface.
  3. Evenly spread 2 tablespoons of marinara sauce on each tortilla.
  4. Sprinkle the shredded mozzarella cheese generously over the marinara sauce.
  5. Arrange your pepperoni slices on top of the cheese.
  6. Starting from one end, tightly roll each tortilla.
  7. Using a pastry brush, lightly coat the outside of the rolled tortillas with olive oil.
  8. Carefully place the roll-ups seam-side down on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes until golden brown and cheese is bubbling.
  10. Remove from the oven and let cool slightly before slicing into pieces.
