Step-by-Step Instructions
  1. Heat the olive oil in a large pot over medium heat until shimmering, around 1-2 minutes.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another 2-3 minutes.
  4. Pour in the broth and bring the mixture to a gentle boil.
  5. Add the diced potatoes, thyme, and bay leaf. Season with salt and pepper.
  6. Simmer uncovered for about 20 minutes until potatoes are tender.
  7. Remove the bay leaf and blend the soup until smooth.
  8. If desired, stir in the heavy cream and heat through.
  9. Taste and adjust seasoning as necessary.
  10. Serve in bowls and garnish with fresh parsley.
