Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare your baking dish with butter or non-stick spray.
- In a large mixing bowl, combine 2 cups of diced butternut squash and 2 medium apples that are peeled, cored, and sliced.
- Sprinkle ¼ cup of brown sugar, 1 teaspoon of ground cinnamon, ¼ teaspoon of ground nutmeg, and ¼ teaspoon of salt over the mixture. Gently mix until coated.
- Drizzle 1 tablespoon of lemon juice over the mixture and toss gently to distribute.
- Transfer the mixture into the greased 9x13 inch baking dish, spreading it evenly.
- In a small bowl, combine ¼ cup of melted unsalted butter with 1 cup of granola or oats. Mix in ½ cup of chopped nuts if desired.
- Distribute the granola mixture over the layered squash and apple.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 15–20 minutes until the topping is golden brown and the squash is tender.
- Let the bake cool slightly before serving warm.
