Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare your baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine 2 cups of diced butternut squash and 2 medium apples that are peeled, cored, and sliced.
  3. Sprinkle ¼ cup of brown sugar, 1 teaspoon of ground cinnamon, ¼ teaspoon of ground nutmeg, and ¼ teaspoon of salt over the mixture. Gently mix until coated.
  4. Drizzle 1 tablespoon of lemon juice over the mixture and toss gently to distribute.
  5. Transfer the mixture into the greased 9x13 inch baking dish, spreading it evenly.
  6. In a small bowl, combine ¼ cup of melted unsalted butter with 1 cup of granola or oats. Mix in ½ cup of chopped nuts if desired.
  7. Distribute the granola mixture over the layered squash and apple.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes.
  9. After 25 minutes, remove the foil and bake for an additional 15–20 minutes until the topping is golden brown and the squash is tender.
  10. Let the bake cool slightly before serving warm.
