- In a large pot, heat olive oil over medium heat. Add chopped medium onion and minced garlic; sauté until the onion is translucent and fragrant.
- Add ground beef to the pot, breaking it apart. Cook until the beef is fully browned.
- Stir in drained kidney beans, drained black beans, and crushed tomatoes. Add chili powder, cumin, and paprika along with salt and pepper.
- Pour in beef broth and bring to a gentle boil. Stir occasionally.
- Reduce heat to low, cover, and let the chili simmer for about 30 minutes.
- Serve hot, topped with shredded cheese and a dollop of sour cream if desired.
