Step‑by‑Step Instructions for Smoky Masala Chai
  1. Begin by pouring 2 cups of fresh, filtered water into a small pot and set it over medium-high heat. Allow the water to come to a rolling boil, watching for those energetic bubbles.
  2. Once the water is boiling, carefully add 4-5 black peppercorns, 3 whole cloves, 3 slightly crushed green cardamom pods, and 1 cinnamon stick to the pot. Reduce the heat to medium-low and let the mixture simmer for 5 minutes.
  3. After simmering the spices, add 2 teaspoons of loose-leaf smoky black tea or 2 tea bags to the simmering pot. Allow the tea to steep for 3-4 minutes.
  4. Next, pour in 1 cup of your choice of milk and add 1-2 tablespoons of brown sugar. Let everything simmer together for another 3-4 minutes.
  5. Finally, strain the chai into mugs using a fine mesh strainer, discarding the spices and tea leaves. If desired, add a sprinkle of cinnamon on top.
