Baking Steps
- Preheat your oven to 350°F (175°C) and prepare the mini loaf pans.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, cream the butter, then mix in the eggs, orange juice, zest, and vanilla.
- Combine the wet mixture with the dry ingredients, stirring until just mixed.
- Fold in the cranberries and optional nuts.
- Fill the mini loaf pans about two-thirds full and smooth the tops.
- Bake for 25-30 minutes or until a toothpick comes out clean.
