Step‑by‑Step Instructions for Kielbasa Potato Soup
  1. In a large pot, heat olive oil over medium heat, add sliced kielbasa and sauté for 5-7 minutes until browned.
  2. Add chopped onion, sliced carrots, and diced celery, sauté for around 5 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute, add thyme, paprika, salt and pepper to taste.
  4. Add diced potatoes and broth, bring to a boil.
  5. Reduce heat, let it simmer for about 20 minutes until potatoes are tender.
  6. Stir in heavy cream and return sautéed kielbasa to the pot, gently heat for additional 5 minutes.
  7. Adjust seasoning if necessary, serve in bowls and garnish with chopped parsley.
