- Soak the tapioca pearls in water for about 30 minutes. Drain and set aside.
- In a medium pot, combine coconut milk, soaked tapioca, sugar, and salt over medium heat, stirring frequently.
- Bring to a gentle boil for 5-7 minutes until tapioca is swollen and translucent.
- Reduce heat to low and simmer for 15-20 minutes until tapioca is fully translucent and tender.
- Remove from heat, stir in diced strawberries and vanilla extract, and allow to cool.
- Transfer to serving bowls, cover, and chill in the refrigerator for at least 30 minutes.
