Preparation Steps
- Begin by slicing the medium cucumber in half lengthwise. Use a spoon to scoop out the seeds.
- Cut the cucumber into thin half-moon slices, approximately ⅛ inch thick.
- Place the cucumber slices in a medium bowl and sprinkle with salt. Toss gently to coat and let sit for about 10 minutes.
- Gently squeeze the cucumber slices to remove any remaining moisture.
- Add the sugar to the cucumber slices and toss gently until combined.
- Pour in the rice vinegar and sesame oil. Stir gently to coat the cucumber slices.
- Stir in the soy sauce and minced garlic, tossing to coat them well.
- Sprinkle the sesame seeds over the salad and toss gently again.
- Add the chopped green onion and sprinkle with red pepper flakes. Mix everything together one last time.
