Method
 

Preparation Steps
  1. Begin by slicing the medium cucumber in half lengthwise. Use a spoon to scoop out the seeds.
  2. Cut the cucumber into thin half-moon slices, approximately ⅛ inch thick.
  3. Place the cucumber slices in a medium bowl and sprinkle with salt. Toss gently to coat and let sit for about 10 minutes.
  4. Gently squeeze the cucumber slices to remove any remaining moisture.
  5. Add the sugar to the cucumber slices and toss gently until combined.
  6. Pour in the rice vinegar and sesame oil. Stir gently to coat the cucumber slices.
  7. Stir in the soy sauce and minced garlic, tossing to coat them well.
  8. Sprinkle the sesame seeds over the salad and toss gently again.
  9. Add the chopped green onion and sprinkle with red pepper flakes. Mix everything together one last time.
  10. Let the salad sit for about 5 minutes before serving to allow flavors to meld.
