Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the chicken, black beans, corn, diced bell pepper, red onion, shredded cheese, taco seasoning, and cilantro.
  3. Place an eggroll wrapper on a clean surface and spoon 2-3 tablespoons of the filling onto it, about 2 inches from the bottom corner.
  4. Fold the bottom corner of the wrapper over the filling, then fold in the side corners and roll towards the top corner, sealing with beaten egg.
  5. Place the eggrolls seam-side down on the lined baking sheet and spray or brush with oil.
  6. Bake in the preheated oven for 15-20 minutes, flipping halfway through for even crispy.
  7. While baking, combine sour cream, mayonnaise, lime juice, hot sauce, and chili powder for the dipping sauce.
