- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the chicken, black beans, corn, diced bell pepper, red onion, shredded cheese, taco seasoning, and cilantro.
- Place an eggroll wrapper on a clean surface and spoon 2-3 tablespoons of the filling onto it, about 2 inches from the bottom corner.
- Fold the bottom corner of the wrapper over the filling, then fold in the side corners and roll towards the top corner, sealing with beaten egg.
