Ingredients
  

For the Bites
  • 2 medium Potatoes peeled and diced
  • 1 cup Broccoli fresh florets
  • ½ cup Parmesan Cheese grated
  • ½ cup Breadcrumbs
  • 1 large Egg to bind the ingredients
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • ½ teaspoon Paprika
  • 2 tablespoons Olive Oil Spray or for drizzling

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Bring a medium pot of water to a rolling boil. Add the diced potatoes and cook for 10 minutes. Toss in the broccoli florets for the last 3 minutes. Drain and cool slightly.
  3. Mash the cooked potatoes and broccoli together in a large mixing bowl until well combined.
  4. Stir in the parmesan cheese, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, and paprika. Mix thoroughly.
  5. Form small patties (about 1 inch wide) with the mixture and place them on the prepared baking sheet.
  6. Spray or drizzle the tops of the bites with olive oil for crispiness.
  7. Bake for 20-25 minutes until golden brown and crispy.
  8. Allow to cool for a few minutes before serving with your favorite dipping sauce.
