- Preheat your oven to 400°F (200°C).
- Bring a medium pot of water to a rolling boil. Add the diced potatoes and cook for 10 minutes. Toss in the broccoli florets for the last 3 minutes. Drain and cool slightly.
- Mash the cooked potatoes and broccoli together in a large mixing bowl until well combined.
- Stir in the parmesan cheese, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, and paprika. Mix thoroughly.
- Form small patties (about 1 inch wide) with the mixture and place them on the prepared baking sheet.
- Spray or drizzle the tops of the bites with olive oil for crispiness.
- Bake for 20-25 minutes until golden brown and crispy.
- Allow to cool for a few minutes before serving with your favorite dipping sauce.
