Step-by-Step Instructions for Falafel
  1. Drain soaked chickpeas and place in a food processor. Add onion, garlic, parsley, cilantro, dill, cumin, cardamom, salt, and black pepper. Blend until mostly smooth with some texture (1-2 mins). If wet, add optional flour to bind.
  2. Sprinkle baking soda into the falafel mixture and pulse a few times to incorporate. Let it rest for 10-15 minutes.
  3. Preheat the air fryer to 375°F for about 3 minutes. Scoop and form falafel mixture into small balls or patties.
  4. Place falafel balls in a single layer in the air fryer basket, ensuring they do not touch.
  5. Lightly spray falafel with cooking oil to achieve a golden-brown crunch.
  6. Air fry for 12-14 minutes, shaking the basket halfway through.
  7. Remove falafel when golden brown and serve warm with tahini sauce.
