Breading
  • 1 cup all-purpose flour for coating
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs for extra crunch
Seasoning
  • 1 teaspoon garlic powder for flavor
  • 1 teaspoon onion powder for flavor
  • 1 teaspoon paprika for color
  • salt and pepper to taste

Method
 

Preparation
  1. Begin by cleaning 1 pound of fresh mushrooms using a damp cloth to remove any dirt. Slice the mushrooms evenly into ¼ inch thick pieces.
  2. Create your breading assembly line: place 1 cup of all-purpose flour in one bowl, beat 2 large eggs in another bowl, and in a third bowl, combine 1 cup of breadcrumbs, 1 teaspoon each of garlic powder, onion powder, paprika, along with salt and pepper.
  3. Dip each mushroom slice into the flour, shaking off any excess, then set aside.
  4. Dip each floured mushroom slice into the beaten eggs, allowing excess egg to drip off.
  5. Press each egg-coated mushroom into the breadcrumb mixture until fully coated.
Cooking
  1. Heat oil in a frying pan or deep fryer to about 350°F (175°C).
  2. Carefully place the coated mushroom slices into the hot oil in batches. Fry for about 3-4 minutes, flipping halfway through until golden brown.
  3. Using a slotted spoon, transfer the fried mushrooms to a plate lined with paper towels to drain excess oil.
  4. Serve immediately with ranch dressing for dipping.
