  1. Combine 2 cups of mashed potatoes, 1 cup of all-purpose flour, 1 teaspoon of salt, ½ teaspoon of pepper, ½ teaspoon of garlic powder, and ½ teaspoon of onion powder in a large mixing bowl. Stir until evenly coated—about 2 minutes by hand.
  2. Crack 2 large eggs into the potato mixture and mix thoroughly for another minute until fully incorporated.
  3. Dampen hands slightly, scoop portions of the potato mixture, and shape into fry-like pieces, about 4-5 inches long and 1 inch thick. Place on a parchment-lined tray.
