  • 1 cup red cabbage finely shredded
  • ½ cup raisins or dried cranberries
  • ½ cup walnuts or pecans chopped
  • ¼ cup fresh parsley chopped
For the Creamy Dressing
  • ¼ cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 2 tablespoons fresh orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or to taste

Method
 

Instructions
  1. Grate the two large carrots into a mixing bowl and set aside.

  4. In a separate bowl, mix the Greek yogurt and mayonnaise, followed by the orange juice, lemon juice, and honey until smooth.
  5. Pour the dressing over the salad, gently tossing to combine.
  6. Taste and adjust the seasoning with salt, pepper, or honey as needed.
  7. Chill the salad for about 15 minutes to enhance the flavors.
  8. Serve chilled or at room temperature, garnishing with extra nuts or parsley if desired.
