Preparation
- Wash the cucumbers under cool water and slice them thinly, about ⅛ inch thick.
- In a mixing bowl, combine Greek yogurt, crumbled feta cheese, and chopped herbs. Mix thoroughly.
- Season the mixture with salt and pepper to taste.
- Spread the yogurt-feta mixture over two slices of whole-grain bread.
- Layer the cucumber slices over the spread, covering most of the mixture.
- Top with another slice of bread, press gently, and cut each sandwich in half diagonally.
- Serve immediately on a platter.
