Method
 

Baking Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your pie crust in a 9-inch pie dish.
  2. Rinse fresh cranberries under cool water, discarding any stems or blemished berries.
  3. In a large mixing bowl, combine cranberries with ¼ cup of granulated sugar and 1 tablespoon of cornstarch, tossing gently to coat.
  4. In a separate bowl, whisk together ¾ cup of granulated sugar, eggs, heavy cream, vanilla extract, ground cinnamon, and salt until smooth.
  5. Pour the cranberry mixture into the prepared pie crust, then pour the custard mixture evenly over the cranberries.
  6. Bake for 40 to 45 minutes, until the custard is set and the top is lightly golden.
  7. Allow the pie to cool on a wire rack for at least 1 hour before slicing.
  8. Serve warm or chilled, optionally topped with whipped cream or vanilla ice cream.
