Baking Instructions
- Preheat your oven to 375°F (190°C) and prepare your pie crust in a 9-inch pie dish.
- Rinse fresh cranberries under cool water, discarding any stems or blemished berries.
- In a large mixing bowl, combine cranberries with ¼ cup of granulated sugar and 1 tablespoon of cornstarch, tossing gently to coat.
- In a separate bowl, whisk together ¾ cup of granulated sugar, eggs, heavy cream, vanilla extract, ground cinnamon, and salt until smooth.
- Pour the cranberry mixture into the prepared pie crust, then pour the custard mixture evenly over the cranberries.
- Bake for 40 to 45 minutes, until the custard is set and the top is lightly golden.
- Allow the pie to cool on a wire rack for at least 1 hour before slicing.
- Serve warm or chilled, optionally topped with whipped cream or vanilla ice cream.
