Cooking Steps
  1. Set Instant Pot to sauté mode. Add vegetable oil and heat until shimmering.
  2. Season the chuck roast with salt, black pepper, garlic powder, and onion powder on all sides.
  3. Brown the roast for 4-5 minutes on each side, then set it aside.
  4. Deglaze the pot with beef broth, Worcestershire sauce, soy sauce, and thyme.
  5. Return the roast to the pot, secure the lid, and set to cook on high pressure for 60 minutes.
  6. Allow for a natural release of pressure for 10 minutes, then quick release any remaining pressure.
  7. Remove the roast and let it rest for a few minutes on a cutting board.
  8. Mix cornstarch with water, then add to the strained cooking liquid in the pot to thicken the gravy.
  9. Slice the roast against the grain and serve topped with the thickened gravy.
