Step-by-Step Instructions
- Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat. Allow the oil to shimmer, indicating it’s ready for cooking.
- Add 1 cup of roasted red peppers to the skillet and sauté for 2-3 minutes, stirring occasionally.
- Stir in the ½ cup of heavy cream, along with 1 teaspoon of garlic powder, 1 tablespoon of fresh lemon juice, 1 teaspoon of paprika, salt, and pepper to taste. Simmer for 3-4 minutes over medium heat.
- Carefully place the 4 cod fillets into the skillet, cover, and cook for 5-7 minutes until opaque and flakes easily.
- Serve the cod warm, drizzling extra sauce over each fillet and sprinkle with additional paprika if desired.
