- Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.

- In a large bowl, crack the six eggs and whisk until fully blended and frothy.

- Add the cup of cottage cheese to the whisked eggs and stir gently.

- Mix in the half-cup of shredded cheddar cheese evenly into the mixture.

- Fold in chopped spinach and red bell pepper, along with seasonings.

- In a small bowl, activate the baking powder with a splash of water and fold it into the batter.

- Pour the tablespoon of olive oil into the mixture and stir until smooth.

- Carefully scoop the egg mixture into the muffin tin, filling almost to the top.

- Bake for 18 to 20 minutes until set and golden on top.

- Allow to cool in the tin for 5 minutes before releasing the egg bites.
