Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Heat heavy cream in a small saucepan until bubbling, then whisk in cornstarch until smooth.
- Allow the cream mixture to cool slightly, then fold it into the cookie dough.
- Drop dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are golden but centers are still soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Sprinkle granulated sugar on top of each cookie.
- Caramelize the sugar using a kitchen torch or broiler until melted and crispy.
- Allow the caramelized sugar to cool and harden before serving.
