  • ¾ cup unsalted butter softened

  • ¼ cup brown sugar packed

  • 1 tablespoon cornstarch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Heat heavy cream in a small saucepan until bubbling, then whisk in cornstarch until smooth.
  7. Allow the cream mixture to cool slightly, then fold it into the cookie dough.
  8. Drop dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes until edges are golden but centers are still soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  11. Sprinkle granulated sugar on top of each cookie.
  12. Caramelize the sugar using a kitchen torch or broiler until melted and crispy.
  13. Allow the caramelized sugar to cool and harden before serving.
