  • 3 cloves garlic minced
  • 2 medium carrots peeled and diced
  • 2 stalks celery diced
  • 1 medium zucchini diced
  • 6 cups low-sodium vegetable broth for a healthy foundation
  • 1 can diced tomatoes undrained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt

For the Tortellini and Greens
  • 9 ounces cheese tortellini fresh or frozen
  • 2 cups spinach leaves roughly chopped
For Garnishing
  • 1 tablespoon fresh parsley chopped (optional)
  • ¼ cup grated Parmesan cheese for topping

Cooking Steps
  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté for 2-3 minutes until translucent.
  2. Stir in carrots and celery, cooking for 5 minutes until softened.
  3. Add zucchini and cook for 3 more minutes, stirring occasionally.
  4. Pour in vegetable broth and add diced tomatoes. Sprinkle in basil and oregano, then season with salt and pepper. Bring to a boil, then simmer.
  5. Cover the pot and simmer for 15-20 minutes.
  6. Add tortellini and cook according to package instructions, about 7-10 minutes.
  7. Stir in spinach and cook for 2 minutes until wilted.
  8. Taste and adjust seasoning as needed.
  9. Ladle soup into bowls and garnish with parsley and Parmesan cheese.
  10. Serve hot.
