Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine 2 tablespoons of olive oil, 1 tablespoon of lemon zest, 2 teaspoons of salt, and 1 teaspoon of black pepper. Mix thoroughly.
  3. Pat the chicken dry with paper towels and rub the seasoning mixture all over the chicken.
  4. Quarter the 2 lemons and place them inside the cavity of the chicken along with the fresh herbs.
  5. Pour 2 cups of chicken broth into the bottom of a roasting pan and position your seasoned chicken above it.
  6. Roast the chicken for about 1 hour and 30 minutes, checking for golden-brown skin.
  7. Switch to broil for the last few minutes of cooking for a crispy skin.
  8. Once cooked, let the chicken rest for 10–15 minutes before carving.
