- In a mixing bowl, combine ¼ cup of olive oil, 2 tablespoons of lemon juice, 1 tablespoon of minced garlic, 1 teaspoon each of paprika and cumin, and ½ teaspoon each of black pepper and salt. Whisk the mixture together until well-blended and fragrant.
- Add 1 lb of peeled and deveined shrimp to the marinade, tossing gently to ensure each piece is evenly coated. Cover and let marinate for 15-30 minutes.
- Preheat your grill to medium-high heat, around 375°F (190°C).
- Thread the marinated shrimp onto skewers, arranging them with space in between for even grilling.
- Grill the shrimp skewers for 2-3 minutes on each side until they turn pink and opaque.
- Carefully remove the shrimp from the grill, sprinkle with 1 tablespoon of freshly chopped parsley, and serve.
