- Wash and chop 1 cup of fresh spinach, dice 1 small tomato, and thinly slice ¼ cup of red onion.

- Place a tortilla in the skillet, add the filling to one half, then fold over. Press down gently.
- Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes until crispy.
- Remove the cooked quesadilla, repeat with remaining tortillas and filling.
