  • ½ cup shredded mozzarella cheese melty cheese
  • ½ cup crumbled feta cheese salty and tangy

  • ¼ cup red onion thinly sliced
  • ¼ teaspoon black pepper to enhance flavor
  • 1 tablespoon olive oil for frying

Step-by-Step Instructions
  1. Wash and chop 1 cup of fresh spinach, dice 1 small tomato, and thinly slice ¼ cup of red onion.
  2. In a mixing bowl, combine spinach, tomato, onion, mozzarella cheese, feta cheese, and black pepper. Mix well.
  3. Heat a skillet over medium heat, add 1 tablespoon of olive oil, and wait until it shimmers.
  4. Place a tortilla in the skillet, add the filling to one half, then fold over. Press down gently.
  5. Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes until crispy.
  6. Remove the cooked quesadilla, repeat with remaining tortillas and filling.
  7. Allow to cool for a minute, slice into wedges, and serve with dips.
