- In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix until well combined.
- If the mixture is too dry, gradually add unsweetened almond milk until it's moist enough to roll into balls.
- Fold in mini dark chocolate chips until evenly distributed.
- Using clean hands, scoop about one tablespoon of mixture and roll into a ball. Repeat until all mixture is used.
- Chill the formed balls in the refrigerator for at least 20 minutes to firm up.
- Store the protein balls in an airtight container in the refrigerator.
