Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet. Sauté minced garlic for 30 seconds.
  3. Add chopped spinach and cook for 3-4 minutes until wilted.
  4. Combine spinach and garlic with cranberries, goat cheese, and cream cheese in a bowl. Season with salt, pepper, and thyme.
  5. Butterfly each chicken breast by slicing them horizontally.
  6. Season inside and outside of each chicken breast with salt and pepper.
  7. Stuff each breast with the filling and secure with toothpicks or kitchen twine.
  8. Place chicken in a greased baking dish and pour chicken broth around them.
  9. Drizzle balsamic vinegar on top, if using.
  10. Cover with foil and bake for 25 minutes. Uncover and bake for an additional 15-20 minutes until cooked through.
  11. Let the chicken rest for 5 minutes before serving.
