- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet. Sauté minced garlic for 30 seconds.
- Add chopped spinach and cook for 3-4 minutes until wilted.
- Combine spinach and garlic with cranberries, goat cheese, and cream cheese in a bowl. Season with salt, pepper, and thyme.
- Butterfly each chicken breast by slicing them horizontally.
- Season inside and outside of each chicken breast with salt and pepper.
- Stuff each breast with the filling and secure with toothpicks or kitchen twine.
- Place chicken in a greased baking dish and pour chicken broth around them.
- Drizzle balsamic vinegar on top, if using.
- Cover with foil and bake for 25 minutes. Uncover and bake for an additional 15-20 minutes until cooked through.
