Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and sauté until translucent.
  3. Stir in minced garlic and cook for another minute.
  4. Gradually add chopped spinach; stir until wilted, about 3-4 minutes.
  5. In a bowl, combine ricotta, feta, Parmesan, and eggs; mix until creamy.
  6. Combine cooled spinach and onion mixture with cheese mixture, season with nutmeg, salt, pepper, and dill.
  7. Roll out pie crust and fit it into a 9-inch pie dish.
  8. Spoon the spinach and cheese filling into the crust, spreading evenly.
  9. Roll out the second pie crust, lay it over filled pie, and seal edges. Cut slits for steam.
  10. Brush egg wash on top of the pie.
  11. Bake in preheated oven for 35-40 minutes, until crust is golden brown.
