- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion and sauté until translucent.
- Stir in minced garlic and cook for another minute.

- In a bowl, combine ricotta, feta, Parmesan, and eggs; mix until creamy.
- Combine cooled spinach and onion mixture with cheese mixture, season with nutmeg, salt, pepper, and dill.
- Roll out pie crust and fit it into a 9-inch pie dish.
- Spoon the spinach and cheese filling into the crust, spreading evenly.
- Roll out the second pie crust, lay it over filled pie, and seal edges. Cut slits for steam.
- Brush egg wash on top of the pie.
- Bake in preheated oven for 35-40 minutes, until crust is golden brown.
