Method
 

Instructions
  1. Prepare the Greens by rinsing and drying the mixed greens and placing them in a large salad bowl.
  2. Shred the carrots and add to the bowl, stirring gently to combine.
  3. Slice the cucumber thinly and add to the salad bowl.
  4. Thinly slice the red bell pepper and add to the salad bowl.
  5. Chop fresh cilantro and mint finely and sprinkle over the salad.
  6. Chop green onions and mix into the salad.
  7. Slice the cooked shrimp into bite-sized pieces and add to the salad.
  8. Prepare the rice noodles and set aside.
  9. Mix the dressing ingredients together in a small bowl.
  10. Emulsify the dressing by drizzling in olive oil while whisking.
  11. Combine the salad and dressing in the bowl and toss gently.
  12. Garnish with sesame seeds before serving.
