Preparation Steps
- In a large mixing bowl, combine ½ cup of chia seeds with 2 cups of your preferred milk. Whisk until well blended, then let sit at room temperature for about 4 hours or overnight in the refrigerator.
- In another bowl, mix 1 cup of Greek yogurt with ½ cup of cooled brewed coffee, ¼ cup of cocoa powder, 1 teaspoon of vanilla extract, and 1 tablespoon of sweetener if desired. Whisk until smooth.
- In serving cups or jars, spoon a layer of the chia pudding, then a layer of the coffee yogurt mixture. Alternate layers until desired height is reached.
- Dust the top with cocoa powder or add toppings like chocolate shavings. Chill for at least an hour before serving to meld flavors.
