  • 8 oz Deli turkey breast preferably low-sodium
  • 1 cup Hummus classic or flavored
  • 1 cup Baby spinach leaves loosely packed
  • 1 cup Shredded carrots or matchstick carrots
  • 1 small Cucumber seeded and cut into matchsticks
  • 1 small Red bell pepper thinly sliced into strips
  • ½ cup Feta cheese crumbled (optional)
  • 2 tablespoon Fresh herbs parsley or cilantro, finely chopped (optional)
  • 1 tablespoon Lemon juice (optional)
  • Salt and black pepper to taste
  • 1-2 tablespoon Olive oil (optional)
  • Toothpicks or small skewers for serving

Step‑by‑Step Instructions
  1. Prepare the vegetables: Rinse and dry baby spinach. Shred carrots if using whole ones. Cut cucumber into matchsticks and slice bell pepper.
  2. Warm the tortillas: Heat tortillas in a skillet or microwave until flexible. Brush with olive oil for added moisture if desired.
  3. Season the hummus: Mix hummus with lemon juice, salt, and pepper until smooth.
  4. Spread the hummus: Lay one tortilla, spread ¼ cup of hummus evenly, leaving edges clear.
  5. Layer the turkey: Arrange 2-3 slices of turkey on the hummus.
  6. Add the vegetables and extras: Layer spinach, carrots, cucumber, and bell pepper. Sprinkle with feta if using.
  7. Roll the tortilla tightly: Starting with the vegetable edge, roll the tortilla gently but firmly.
  8. Repeat for the remaining tortillas: Assemble all roll ups, placing them seam side down.
  9. Slice into roll ups or serve whole: Cut rolls into pinwheels or leave them whole.
  10. Chill if desired: Wrap roll ups in plastic wrap and refrigerate for 20-30 minutes for cleaner slices.
  11. Serve: Arrange roll ups on a plate, garnished with herbs or extra hummus as desired.
