Ingredients
  

For the Filling
  • 1 lb ground beef can substitute with ground turkey
  • 1 medium onion chopped; can substitute with shallots
  • 2 medium carrots diced
  • 2 stalks celery diced; leeks are a good alternative
  • 2 cloves garlic minced; garlic powder can be used
  • 2 tablespoon Worcestershire sauce can substitute with soy sauce
  • 1 tablespoon tomato paste can use ketchup if needed
  • 1 teaspoon dried thyme fresh thyme can be used
  • 1 salt to taste
  • 1 ground black pepper to taste
  • 1 cup beef broth can substitute with chicken or vegetable broth
For the Yorkshire Batter
  • 1 cup all-purpose flour can use gluten-free blend
  • 1 cup milk use non-dairy for vegan options
  • 3 large eggs or egg replacer for vegan
  • ½ teaspoon salt omit if needed
  • 3 tablespoon butter or coconut oil for dairy-free

Method
 

Preparing the Filling
  1. Brown the beef in a skillet over medium heat for 5-7 minutes, breaking it up. Drain excess fat.
  2. Sauté chopped onion, diced carrots, and diced celery for 5-7 minutes until softened.
  3. Add minced garlic, Worcestershire sauce, tomato paste, dried thyme, salt, and pepper. Stir for 2 minutes until fragrant.
  4. Pour in beef broth and simmer for 5-10 minutes until thickened. Set filling aside to cool.
Preparing the Batter
  1. Whisk together flour, milk, eggs, and salt in a bowl until smooth. Let rest for 30 minutes.
  2. Preheat oven to 425°F (220°C). Prepare muffin tin.
  3. Melt butter in muffin tin in the oven for about 5 minutes.
  4. Pour batter into muffin cups, filling halfway. Spoon in meat filling on top.
  5. Bake for 20-25 minutes until puffy and golden brown. Cool slightly before serving.
