- Prepare the marinade by whisking together olive oil, chili powder, paprika, cayenne pepper, garlic powder, salt, and pepper in a small bowl.
- Marinate the chicken by rubbing the spice mixture on both sides of the chicken breasts and let it sit for at least 10 minutes.
- Preheat the grill to medium-high heat, around 375°F (190°C).
- Grill the chicken for approximately 6–7 minutes on each side until fully cooked.
- Rest the chicken for about 5 minutes after grilling, then slice it into thin strips.
- Assemble the wraps by laying the tortillas out and layering with lettuce, tomato, chicken strips, cheddar cheese, sour cream, and salsa.
- Roll the tortillas tightly, folding in the sides to encase the fillings.
- Optionally, grill the wrapped tortillas for 1–2 minutes on each side for added crispiness.
- Serve the wraps sliced in half with lime wedges on the side.
