  • 1 teaspoon baking soda

  • ¾ cup granulated sugar can reduce for less sweetness
  • 1 large egg lightly beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 ½ cups all-purpose flour be careful not to overmix

Step-by-Step Instructions for Banana Muffins
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the 3 ripe bananas until smooth and creamy.
  3. Stir in the ⅓ cup of melted butter until fully combined.
  4. Sprinkle in the 1 teaspoon of baking soda and pinch of salt, mixing well.
  5. Add in ¾ cup of granulated sugar and stir until evenly combined.
  6. Mix in the beaten egg and 1 teaspoon of vanilla extract until combined.
  7. Sprinkle in 1 teaspoon of baking powder and mix well.
  8. Gradually fold in 1 ½ cups of all-purpose flour until just combined, avoiding overmixing.
  9. Fill each muffin cup about two-thirds full with batter.
  10. Bake for 20-25 minutes, until golden brown and a toothpick comes out clean.
  11. Cool in the tin for 10 minutes before transferring to a wire rack.
