For the Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 pinch salt
  • 1 dash pepper
For the Salad
  • 1 cucumber
  • 1.5 cups cherry tomatoes
  • 8 oz fresh mozzarella
  • 0.5 large red onion optional
  • fresh basil leaves optional

Method
 

Preparation Steps
  1. In a small bowl, combine olive oil, balsamic vinegar, dried oregano, dried basil, and a pinch of salt and pepper. Whisk until well blended and set aside.
  2. Peel the cucumber and score the skin with a fork, then slice thinly and dice. Add to a mixing bowl.
  3. Quarter the cherry tomatoes and gently add to the bowl with the cucumber.
  4. If using, thinly slice the red onion and add to the bowl with the other ingredients.
  5. Slice the fresh mozzarella and gently fold into the salad mixture.
  6. Pour the dressing over the salad and toss gently to coat.
  7. Allow the salad to marinate for about 10 minutes before serving.
