Preparation Steps
- In a small bowl, combine olive oil, balsamic vinegar, dried oregano, dried basil, and a pinch of salt and pepper. Whisk until well blended and set aside.
- Peel the cucumber and score the skin with a fork, then slice thinly and dice. Add to a mixing bowl.
- Quarter the cherry tomatoes and gently add to the bowl with the cucumber.
- If using, thinly slice the red onion and add to the bowl with the other ingredients.
- Slice the fresh mozzarella and gently fold into the salad mixture.
- Pour the dressing over the salad and toss gently to coat.
- Allow the salad to marinate for about 10 minutes before serving.
