Preparation Steps
- In a large mixing bowl, combine the cream cheese and shredded cheddar cheese until smooth and creamy.
- Add in the minced onion, salsa, ground cumin, cayenne pepper, garlic powder, salt, and pepper. Mix until well combined.
- Shape the mixture into a rough ball. If too soft, refrigerate for 15-20 minutes.
- Spread the crushed tortilla chips on plastic wrap and roll the cheese ball in them.
- Create ridges around the ball to mimic a pumpkin shape.
- Insert the bell pepper stem into the top of the cheese ball for decoration.
- Wrap in plastic wrap and refrigerate for at least 1 hour.
- Serve with crackers or fresh vegetables.
