For the Spicy Chickpeas
  • 1 can Canned chickpeas drained and rinsed
  • 1 tablespoon Olive oil for coating
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 0.5 teaspoon Cayenne pepper adjust to taste
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
For the Salad Base
  • 4 cups Mixed greens arugula, spinach, and romaine
  • 1 cup Cherry tomatoes halved
  • 0.5 cup Red onion thinly sliced
  • 1 medium Cucumber sliced
  • 1 medium Red bell pepper chopped
For the Avocado Dressing
  • 1 medium Avocado peeled and pitted
  • 2 tablespoons Fresh lime juice
  • 1 tablespoon Honey or maple syrup for sweetness
  • 2-4 tablespoons Water to adjust consistency
  • 2 tablespoons Fresh cilantro or parsley chopped

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine chickpeas with olive oil, paprika, cumin, cayenne pepper, salt, and black pepper. Toss well.
  3. Spread seasoned chickpeas on a parchment-lined baking sheet and bake for 20-25 minutes, shaking halfway through.
  4. In a large salad bowl, combine mixed greens, cherry tomatoes, red onion, cucumber, and red bell pepper. Toss gently.
  5. In a blender, combine avocado, lime juice, honey, and water. Blend until smooth, adjusting water to desired consistency.
  6. Let baked chickpeas cool slightly before adding to the salad.
  7. Add chickpeas to the salad, drizzle avocado dressing, and toss gently to combine.
  8. Garnish with chopped cilantro or parsley and serve immediately.
