Ingredients
  

For the Lasagna
  • 9 sheets Lasagna noodles Cook until al dente.
  • 2 cups Ricotta cheese Essential creamy base.

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles in boiling water for 8-10 minutes until al dente. Drain and lay flat.
  3. Combine ricotta cheese, egg, oregano, basil, salt, and pepper in a mixing bowl until creamy.
  4. Spread a layer of marinara sauce on the bottom of the baking dish.
  5. Layer three lasagna noodles over the sauce.
  6. Spread half the ricotta mixture over the noodles.
  7. Layer half of the spinach, zucchini, bell peppers, and mushrooms on top.
  8. Add more marinara sauce over the vegetables.
  9. Repeat layering with three more noodles, remaining ricotta, vegetables, and sauce.
  10. Top with final three noodles, remaining sauce, and mozzarella cheese.
  11. Cover with foil and bake for 30 minutes.
  12. Uncover and bake for another 15 minutes until cheese is bubbly and golden.
  13. Allow to cool for 10-15 minutes before serving.
