- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles in boiling water for 8-10 minutes until al dente. Drain and lay flat.
- Combine ricotta cheese, egg, oregano, basil, salt, and pepper in a mixing bowl until creamy.
- Spread a layer of marinara sauce on the bottom of the baking dish.
- Layer three lasagna noodles over the sauce.
- Spread half the ricotta mixture over the noodles.
- Layer half of the spinach, zucchini, bell peppers, and mushrooms on top.
- Add more marinara sauce over the vegetables.
- Repeat layering with three more noodles, remaining ricotta, vegetables, and sauce.
- Top with final three noodles, remaining sauce, and mozzarella cheese.
- Cover with foil and bake for 30 minutes.
- Uncover and bake for another 15 minutes until cheese is bubbly and golden.
- Allow to cool for 10-15 minutes before serving.
