- Pat the cod fillets dry with paper towels.
- Season both sides with salt and pepper.
- Whisk together soy sauce, rice vinegar, honey, brown sugar, sesame oil, ginger, and garlic in a bowl.
- Heat vegetable oil in a skillet over medium heat.
- Cook the cod for 3 to 4 minutes until the underside is brown.
- Flip the fillets and pour the ginger soy glaze over them.
- Reduce heat and simmer for 2 to 3 minutes.
- Check for doneness and remove from heat.
- Transfer to a plate and drizzle with remaining glaze.
