- Heat the olive oil in a large skillet over medium-high heat for about 1 minute.
- Add minced garlic to the skillet and sauté for approximately 30 seconds until fragrant.
- Add thinly sliced shiitake mushrooms and cook for about 4–5 minutes until softened.
- Increase heat and add extra firm tofu strips, stir-fry for about 3–4 minutes until browned.
- Toss in sliced baby bok choy and stir-fry for another 2 minutes until wilted.
- Pour in soy sauce, balsamic vinegar, and ground black pepper; stir to combine.
- Drizzle sesame oil over stir fry and sprinkle with sesame seeds; toss to combine.
