- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add olive oil and sauté chopped onions for about 5 minutes until soft.
- Add ground beef to the skillet and cook for 7-10 minutes until browned; drain excess fat.
- In a mixing bowl, combine cream of mushroom soup, cream of celery soup, milk, salt, and pepper; stir until smooth.
- Grease a baking dish and layer half of the sliced potatoes at the bottom.
- Spread half of the ground beef mixture over the potato layer.
- Pour half of the soup mixture evenly over the ground beef layer.
- Repeat with the remaining potatoes, beef mixture, and soup mixture in layers.
- Cover with foil and bake for 1 hour.
- After 1 hour, remove the foil, sprinkle cheese on top, and bake for an additional 15-20 minutes until melted.
- Allow to cool for 5 minutes before serving.
