Step-by-Step Instructions for Minestrone Soup
  1. Start by turning on the Sauté function on high on your Instant Pot. Add olive oil and allow it to heat until the oil begins to sizzle.
  2. Add the diced onion, sliced carrots, sliced celery, and diced zucchini to the pot. Sauté for 2-3 minutes until fragrant and soft. Sprinkle in Italian seasoning and salt.
  3. Add the diced fresh tomatoes, tomato sauce, trimmed green beans, drained white kidney beans, dry shell pasta, and water or broth. Stir to combine.
  4. Seal the Instant Pot lid and set to pressure cook for 5 minutes.
  5. Perform a quick release, then carefully open the lid.
