- In a small saucepan over medium heat, melt ½ cup of unsalted butter, stirring constantly until browned.
- In a large mixing bowl, combine the browned butter and 1 cup of granulated sugar until smooth. Add 1 large egg and 1 teaspoon of vanilla extract, blending until incorporated. Fold in 3 ripe, mashed bananas.
- In a separate bowl, whisk together 1.5 cups of all-purpose flour, 0.5 teaspoon of baking soda, 1 teaspoon of baking powder, 0.5 teaspoon of salt, and 1 teaspoon of ground cinnamon.
- Gradually add the dry ingredients to the wet banana mixture, stirring gently until just combined.
- Gently fold in 0.5 cup of brown sugar into the batter.
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan. Optionally, place dollops of sugar cookie dough on top.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
