Preparation Steps
  1. In a large mixing bowl, combine cream cheese, powdered sugar, and vanilla extract. Beat on medium speed for 2-3 minutes until smooth.

  3. In a separate bowl, mix together fresh mixed fruits.
  4. Pour the cheesecake mixture over the fresh fruit and gently stir until coated.
  5. Drizzle half of the caramel sauce over the mixture and fold gently to incorporate.
  6. Transfer to serving dish and chill for up to an hour if preparing in advance.
  7. Sprinkle granola over the top before serving.
  8. Drizzle the remaining caramel sauce over the salad.
  9. Garnish with reserved fruit if desired.
  10. Serve immediately or allow to chill in the fridge for up to an hour.
