Method
 

Preparation
  1. Preheat your oven to 325°F (163°C) and grease the 9-inch springform pan.
  2. In a large bowl, beat together cream cheese, granulated sugar, and vanilla extract until smooth.
  3. Add eggs one at a time, mixing well after each addition to maintain airiness.
  4. Mix in sour cream and flour until combined without overmixing.
  5. Prepare the apple filling by mixing melted butter, brown sugar, cinnamon, and nutmeg in a separate bowl.
  6. Fold in the chopped apples gently till well-coated.
  7. Pour half of the cheesecake batter into the prepared pan and smooth with a spatula.
  8. Spread the apple filling evenly over the cheesecake batter.
  9. Top with remaining cheesecake batter, smoothing the top once more.
  10. For the crumble, mix melted butter, brown sugar, and flour until crumbly, then sprinkle over the cheesecake.
  11. Bake for about 1 hour until edges are set and center jiggles slightly; cool for 30 minutes.
  12. Chill in the refrigerator for at least 2 hours before serving.
