Ingredients
  

Crust
  • 1 cup Graham cracker crumbs
  • 2 tablespoons Granulated sugar
  • 5 tablespoons Unsalted butter, melted
Cheesecake Filling
  • 16 ounces Cream cheese, softened
  • ¾ cup Granulated sugar
  • 1 cup Sour cream
  • 1 teaspoon Vanilla extract
  • 3 large Eggs
Topping
  • ¼ cup Granulated sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl until it resembles wet sand. Press firmly into the bottom of a springform pan.
  3. Bake for 8-10 minutes until lightly golden. Let cool.
  4. In a large bowl, beat cream cheese with an electric mixer on medium speed until creamy.
  5. Gradually add sugar, then mix in sour cream and vanilla. Add eggs one at a time, mixing just until combined.
  6. Pour the filling over the cooled crust and smooth with a spatula.
  7. Bake for 55-60 minutes until edges set and center jiggles slightly.
  8. Turn off oven, leave the door ajar and cool for an hour.
  9. Cool on a wire rack, then refrigerate for at least 4 hours.
  10. Before serving, sprinkle granulated sugar over top and caramelize using a kitchen torch.
  11. Let cool, slice, and serve immediately.
