Method
 

Prepare the Blueberry Topping
  1. Combine blueberries, sugar, lemon juice, and cornstarch in a saucepan. Cook over medium heat until thickened, about 10-15 minutes.
Make the Crust
  1. Crush Maria cookies and mix with melted butter. Press into bottom of springform pan and refrigerate.
Prepare the Cheesecake Filling
  1. Beat cream cheese until smooth. Gradually add condensed milk, sour cream, vanilla extract, and lemon juice. Fold in eggs.
Combine and Bake
  1. Pour filling over cooled crust. Bake at 325°F (163°C) for 45-55 minutes until set.
Cool and Chill

Add the Blueberry Topping
