Prepare the Blueberry Topping
- Combine blueberries, sugar, lemon juice, and cornstarch in a saucepan. Cook over medium heat until thickened, about 10-15 minutes.
Make the Crust
- Crush Maria cookies and mix with melted butter. Press into bottom of springform pan and refrigerate.
Prepare the Cheesecake Filling
- Beat cream cheese until smooth. Gradually add condensed milk, sour cream, vanilla extract, and lemon juice. Fold in eggs.
Combine and Bake
- Pour filling over cooled crust. Bake at 325°F (163°C) for 45-55 minutes until set.
Cool and Chill
- Allow cheesecake to cool at room temperature, then refrigerate for at least 4 hours.
Add the Blueberry Topping
- Spread cooled blueberry topping over the cheesecake before serving.
