Ingredients

For the Caramel Sauce
  • ½ cup unsalted butter Adds richness; can substitute with vegan butter
  • 1 cup dark brown sugar Provides sweetness; light brown sugar works too
  • ½ cup heavy whipping cream Creates luxurious texture; use coconut cream for dairy-free
  • ¼ cup Stubb's Sticky Sweet Bar-B-Q Sauce Adds unique smoky flavor; any favorite BBQ sauce can substitute
For the Grilled Peaches
  • 4 pieces fresh peaches The star of the dessert; nectarines can be used as alternative
  • 2 tablespoons butter (melted) Used to brush peaches before grilling
For Toppings
  • ½ cup pecans (toasted) Adds crunch; walnuts or almonds can substitute
  • ½ cup pecan shortbread or gingersnap cookies Provides delightful texture; opt for gluten-free if desired
  • 4 scoops vanilla ice cream Offers creaminess; choose dairy-free version for vegan
  • 1 cup whipped cream Additional topper for richness; can be homemade or store-bought
  • 4 pieces fresh cherries Optional garnish; adds color to sundaes

Equipment

  • Grill
  • medium saucepan

Method

Step-by-Step Instructions
  1. In a medium saucepan over medium heat, melt ½ cup of unsalted butter. Stir in 1 cup of dark brown sugar until fully dissolved. Gradually whisk in ½ cup of heavy whipping cream and allow to simmer for 5-8 minutes until thickened. Remove from heat, stir in ¼ cup of BBQ sauce, and let cool.
  2. Preheat your grill to medium-high heat, about 400°F. Wash and slice 4 fresh peaches in half, removing the pit. Melt 2 tablespoons of butter and brush the cut sides of the peaches generously.
  3. Place the peach halves cut-side down onto the grill. Close the lid and grill for 5-6 minutes until grill marks appear and peaches have softened.
  4. Remove the grilled peaches from the grill and let cool for a minute. Scoop vanilla ice cream onto the warm peach halves and drizzle with caramel sauce.
  5. Sprinkle toasted pecans, crumbled cookies, and add whipped cream on top. Garnish with a fresh cherry.
